experience begins as one opens the huge menu to the section on APPETIZERS.
ENTRADAS are a major preoccupation among South Americans, more so perhaps than
tapas among Iberians, aperitifs among the Europeans and mezzes among the Arabs.
The big to-do about appetizers stems from a long-held cultural code that at
noon or dinner time the civilized thing is not to focus on ingesting the meal
itself but rather on relishing the sociable exchange among friends, small talk
as it may be, with a convivial flute of bubbly and one, or two, or more
entradas.
